Everyone is off trying these new Grill’d vegan burgers lately but I’m sticking to the budget friendly version of a home cooked one tonight! Just a super easy burger with plenty of colour and veggies (and condiments) 😍😍 I took inspiration from @kelsey_jayne_ with the best tag of that was used on her lasagne post 😂 . . . When food tastes this good - it’s hard to remember that so much of this meal = vegetables 😂. This is junk food for me, but it’s still majority veggies! 💛 . . . BURGERS 🍔 INGREDIENTS . . . • burger buns • gloopy sauce - English mustard/veganaise/American mustard/diced gherkins/garlic powder/cracked pepper • raw purple cabbage • crispy lettuce • @australianeatwell kale and paprika burger patties (no nasties, all real ingredients) • @mylifebio biocheese cheddar slice (one for me and two slices for my husband 🧀) • coriander • diced tomato • @foleysfrothingfermentations Smokey jalapeño sauerkraut . . . Starting my 5 day stretch with markets and ending with all the deliveries, I was thankful to not have an alarm (or seven) set for the crack of dawn!! As for the day, I had a couple of options... . . . A. Be productive, clean the house and cook new dishes orrrrr B. Stay in bed most of the day - be lazy and venture out to make Nachos. . . . NORI SEWEED TOFU + RICE + YUMMY SPROUTS || MID WEEK REPEATS 💛💛 . . . Hello! I survived Wednesday bake day and was keeeen to repeat Monday’s dinner! . . . Taken from Monday’s post 😂 My veggie side is simple . . • leek and sprouts (steamed) grilled • sea kelp delight seasoning from @bragglivefoods • chilli oil • wakame flakes • sesame seeds . . . I dipped the (pressed) tofu slices in a mixture of aquafaba (chickpea liquid), lemon juice, sesame oil, black pepper and sea salt (thanks Ash! @innerpickle_ 😌 for the idea!) I then dipped the block into wakami flakes before dipping into a mixture of flour, sea kelp seasoning, wakame flakes and sea salt. I shallow fried these until crispy. . . . SO. DARN. GOOD. (AGAIN 😉) . . . IMPROVISED SCRAMBLED LEFTOVERS 💛 || COLOURFUL & VEGAN . . . Happy Tuesday! I’m always trying to improve my cooking and a focus this year as part of that has been trying to have less waste in the kitchen and use up leftover produce. I used to be THE WORST - especially back when I wasn’t vegan - doing a massive chaotic food shop and following it up with meals out, and produce thrown out 😑😑😑 I’d like to think I’ve improved significantly since then! 😂 . . . The base of this meal is my greens/purple cabbage combo that makes all food look amazing 😉 I warm them up in a pan with some salt and garlic. Any seasoning works though! . . . For the scramble I use; smoked paprika, turmeric, Dijon + English mustard (because both are amazing), pumpkin seeds, cracked pepper, regular salt and dried oregano. If I have them laying around I add some hemp seeds. To finish I dice up red capsicum and mix it through - and the whole dish is topped with fresh parsley and chilli flakes! . . . Not a bad little dish! I love how colourful it is, plus it’s about a 10 min meal in the end! Everything is totally customisable - if you have bread you can load it on toast or leave it like the picture 😌💛 . . . Today is bake day 1 out of 2, and I’m looking forward to having a day in the kitchen! NORI TOFU + RICE + COLOURFUL VEG || MONDAY MEALS 💛 . . . Hello! Happy Monday everyone! I had another craving for tofu and nori ever since @innerpickle_ put out the recipe for ‘tofish’ fingers I’ve been OBSESSED 😍 I was going to bake in breadcrumbs but I had a day on the road with work today and shallow frying seemed so much more (deliciously unhealthy 😉) of a comfort meal! 💛 . . . My veggie side is simple . . • purple cabbage • Bok choy and leek • sea kelp delight seasoning from @bragglivefoods • chilli oil • wakame flakes • sesame seeds . . . I dipped the (pressed) tofu slices in a mixture of aquafaba (chickpea liquid), lemon juice, sesame oil, black pepper and sea salt (thanks Ash! @innerpickle_ 😌) I then dipped the block into wakami flakes before dipping into a mixture of flour, sea kelp seasoning, wakame flakes and sea salt. I shallow fried these until crispy. . SO. DARN. GOOD. . . . I treated myself to the seaweed seasonings (it’s been a long time since some pricier seasonings!). Usually I’m on more of a budget, so would go to my local Asian store and get rice seasoning and nori sheets. Nori sheets can be easily broken up into flakes 👌🏻 . . . It’s double bake day this week so Tuesday/Wednesday in the kitchen! VEGAN NACHOS || HOMEMADE NUT FREE CHEESE (V) SAUCE 🏆🧀 . . . Hi I’m Zoe. If you’re new here, please note you will see a heck of a lot of vegan nachos on this page (and purple cabbage) 🙈 . Every time I post these I do think I’m one more post away from transforming this to a nachobyzo Instagram acc 😂😂😂 . . We ate these at the awkward 3pm time slot - and continue to pick at leftovers 😌 ). . . For this dish I added a thick gloopy cheese sauce alongside Nozerella vegan cheese 😍 This is how I did it - all ingredients to taste btw as measuring ingredients is a work thing only 💁🏻‍♀️😂 . . . ➡️ Cauliflower 1/2 steamed, almond milk, mustard (English and Dijon), NOOCH, chilli, pepper, turmeric, smoked paprika, cornflour, salt. Blend everything but the cornflour, transfer to saucepan and cook on low heat adding cornflour as you go. It gets reaaaaally gloopy 😍 . . The bean mixture is a mix of pinto, kidney & black beans (I use canned beans), cooked in spices (chilli, paprika, cumin, garlic powder & cayenne). . . In a separate sauce pan to the beans, I heat up; tomato paste, tinned tomatoes (1 can), I can of refried beans, paprika, cumin, chilli and a dash of salt. This thickens and once it’s all heated through I dump all the other beans in and stir through. . . . I keep some spare white corn chips on hand so I can scoop up some of the mixture at the end 👌🏻 keep in mind this is a HUGE DISH. M loves it cold (weird to me) so we usually have this as dinner with only half consumed - and M finishes it off over the next day. . . . I woke up without an alarm and after the quick panicked feeling of ‘S%#* I’m late for work!’ (Any one else get that on the weekend?) 🤦🏻‍♀️ I was ready to go with a perfect weekend breakfast, enjoyed on a day off👌🏻 . . . . Since I started making scrambled tofu, the recipe has increased in ingredients and decreased in ingredients. I’d like to think I now have a pretty good standard recipe! With that in mind, I love new suggestions so will always have it a little different each time 😉 . . . My creamy tofu scramble ingredients (what I used) • tofu (I used the organic Woolworths macro one as it crumbs super easily 👌🏻) . . —- tofu spices . • turmeric • pepper/salt • mild English mustard or Dijon • ground smoked paprika • black salt (using the smallest amount) • sunflower seeds • garlic powder • red and green chilli diced up • dash of oil (I use chilli oil) . . . . The mustard makes this SO creamy. My husband looked up from eating them and said they were scary close to how he remembers scrambled eggs to be 😂. I also noticed that he didn’t use sriracha sauce as a topper - meaning this scramble is one tasty dish! . . . . Happy Saturday beautiful people 😌 it’s my day off before Sunday markets tomorrow! Tasty refried beans and fluffy rice - all the salads and condiments are totally customisable 👌🏻 . . Delivery Day at work is fast becoming burrito comfort night 😅 I’ve had a day on the road today clocking in 160km excluding commute and drive home (another 35km combined). Also squeezed in a quick bake and some admin - it made for almost a 10 hour day. . . . . Even though I’m tired, I love knowing that by the end of Thursday there are slightly more vegan options for baked goods in Perth 🍰💛 . . GIANT RAVIOLI || AKA FREEZER FUNZIES 😉 . . . These ravioli are MASSIVE and are packed with spinach, tofu and leek 🙌🏻 😌 available at @lavidavegangrocery or @lovinghutperth . . . . On bedridden days freezer meals are perfect. I absolutely rate this pasta! For greens, all I did was throw some fresh parsley and basil at it 🌿🍃. I drizzled on chilli oil, added pine nuts and some vegan Parmesan I had in my fridge. . . . Keeping it simple tonight 😎 I feel better just fatigued and I have a huge bake day tomorrow. Looking forward to being more active on here too! 😌 . . . . . . . . . . . . . . . . . .

COLOURFUL VEGAN BREAKFAST || SICK DAY FOOD 🤒🤒🤒 . . . Happy Tuesday 😌 This meal is actually a mix of a lot of different foods, mostly leftover veggies. I’m off work unwell which is even more of a reason to choose colourful nourishing meals 💛 . . HOW TO MAKE . 1️⃣ Chuck green leaves in a bowl. I like spinach and rocket. 2️⃣ Top with seeds, or nuts. Or both - any you can find, I used sunflower and pumpkin. 3️⃣ Purple cabbage. Cooked until slightly charred with diced ginger, chilli oil, salt and garlic powder. Throw it on but save a little bit 4️⃣ Chop up a little spring onion 5️⃣ Remember eggplant takes time to oven bake so slice it super thin and pan fry in chilli oil, oregano, sea salt and any herb you like the look/taste of 6️⃣ Fry up last little bit of cabbage with diced cherry tomatoes and chilli. Anything you can find works too. 7️⃣ Throw on ingredients from points 4, 5 and 6. Top with more seeds, chilli flakes and fresh herbs. I used basil 8️⃣ You can add dressing. I was lazy and didn’t 😉 . . SALT AND PEPPER TOFU w/ALL THE GREENS 🥦🌿🍃 . . Easy Monday night meal. Unwell and needing something equal parts nutritious and comfort food. . . Here’s how I did it ⬇️⬇️⬇️ . . I pressed my tofu between paper towels and heavy books to get it as dry as possible. After leaving it for about 45 mins, I cut the tofu block into slices coating in salt, pepper and flour. I drop them into the oil until browned. So easy. . . . I steamed my sprouts until soft and oven roasted alongside bok choy and leek. All the veggies were flavoured with paprika, garlic, salt, sesame seeds and chilli oil. Served on rice 😌 . . . . Start to a new week and I’m unwell. It’s lame with a huge week ahead but all I can do is feed myself some good food and rest! What’s everyone’s favourite comfort/sick day meal? xx . . Huge thanks to anyone following these posts or stories (or engaging in the world’s most inconsistent DMs with me 🙃). VEGAN BRUSCHETTA - A 5 MIN MEAL FOR AN ANNIVERSARY BREAKFAST 🥖🍅🌱🧀 . . . It’s my one year wedding anniversary today and I made a vegan breakfast feast thanks to the well stocked vegan section at IGA Baldivis 😌😌 . . . Simply toasted bread (your choice) spread with Nuttelex and minced garlic (garlic butter). Topped with incredible vegan fetta from @noshingnaturally 😍😍. Finally diced tomatoes, basil leaves and balsamic dressing. I use the @ceresorganics Coconut Balsamic, I bought it on a whim once and it’s really lovely! Any balsamic will do though - oh and if you can eat red onion, I would 100% dice it up and add it as well! If I could eat it I would! 😂 . . . So tasty and light - worth splurging on the fetta as all the other ingredients were ridiculously cheap! I also bought a couple of @noahsjuice and some pretty raw desserts from @rawbychris 💛 . . . VEGAN MAC AND CHEESE BAKE 🧀🧀 || NUT FREE AND TOTAL COMFORT FOOD 😍😍 . . . This is my ultimate comfort food dish and it’s nut free too 💛 truth is I made it after burritos last night as I’m out to dinner tonight and my husband is home by himself 😌 . That should be proof enough that this dish is super simple! . . . I’m giving myself 20 wife points for this one which balances out the minus 20 for leaving the kitchen in a state 😂. I guarantee this meal is so fast and easy - I just happen to be a super messy cook. . . . CHEESE SAUCE (NUT FREE) - Nooch (as much as you can handle) - Half a cauliflower (steamed until soft) - almond milk (I use it to help blend the cauliflower, adding more to get the right consistency in the sauce) - Dijon mustard - Garlic powder - turmeric to send it yellow! - To taste; chilli, salt, paprika ** I also dumped in some shredded vegan cheese but it’s totally optional. . . . I use a blender stick in a saucepan. The sauce is totally customisable, best to taste as you go! 😉 . . . . I pan fried mushrooms in chilli infused oil, garlic and a bit of salt. I added sage on a whim (why not?) and it smelt amazing! I stirred it through the cheese sauce, giving it extra flavour! Cook your pasta then drain. Pour it into the pan, dump the sauce on. Mix the sauce through the pasta in a messy and non professional way - before topping with panko breadcrumbs 👌🏻 . . . 10/10 would recommend. I’m hoping that there’s enough left over for me to have tomorrow! xx . . . . . . .

VEGAN BURRITO NIGHT || The one where I forgot to buy the freaking lettuce 😑. And purple cabbage saves the day 👌🏻🌯🌯 . . . Burritos are the food I ditch my verrrry loosely made meal plan for. I make mine usually with fresh crispy lettuce, easy (tinned) but tasty refried beans and fluffy rice - I use far too much @byronbaychillico green jalapeño sauce. . . . I forgot to buy lettuce (@galeaaats - I KNOW!). But I usually use it for crunch and my goodness does purple cabbage work super well! Those following for a while know I stock my fridge with purple cabbage. And it worked here! The wasn’t really worth it. I’m happy to wait for Hass to return. . . I had another craving for the @innerpickle_ recipe for ‘tofish’ fingers (link is in her bio!), but no patience for spending a lot of time on dinner 🤷🏻‍♀️. So my tofu blocks are half wrapped up but super tasty! (Tasty also = lazy 🙌🏻) . . . My veggie side is simple . . . . • purple cabbage • Bok choy • hemp seeds • chilli oil diced • peanuts • sesame oil and sesame seeds • leek diced . . . Tomorrow is bake day at work 🍰. VEGAN VEGGIE PACKED PASTIES w/ ROASTED BRUSSELS & HUMMUS 🙌🏻 . . . This is just super simple store bought short crust pastry. Pasties are so comforting and this pastie was stuffed with veggies! . . Inside; diced veggies - potato, carrots, swede, turnip, silverbeat, peas and herbs/spices to taste. I also roasted Brussels in chilli oil, garlic and paprika - serving with a prepackaged hummus (carrot and turmeric). SO tasty! . . . Back to work tomorrow and back to cakes! I have sort of meal planned for the week and it’s hopefully going to make the week super organised. Hope you enjoyed the Easter break, I’ve definitely enjoyed the themed foodie posts and chocolate pics! 💛💛😌 . . . . . . . . . . . . . . . . . . . . . . . . . .

VEGAN NACHOS NEXT LEVEL || THE ONE WHERE CHEESE (V) SAUCE SAVES THE DAY 🏆🧀 . . Amazing nachos but what a journey. Let down again by unripe which I paid $5 for. Also dropped my chilli oil (glass). I may have destroyed the kitchen but this dish was well worth it! 😍 . . . For this dish I added a thick gloopy cheese sauce and THANKFULLY the creaminess totally stepped up where my avocado couldn’t. . . . Cupcake baking is kicking my bum with measuring ingredients. I know that one of these days it’ll seep into my home cooking 😉 for now though... CHEESE SAUCE - ingredients to taste 💁🏻‍♀️😂 . . . ➡️ Cauliflower 1/2 steamed, almond milk, mustard, NOOCH, chilli, turmeric, paprika, cornflour, salt. Blend everything but the cornflour, transfer to saucepan and cook on low heat adding cornflour as you go. It gets reaaaaally gloopy 😍 . . . The bean mixture is a can of each bean pinto, kidney & black, cooked in spices (chilli, paprika, cumin, garlic powder & cayenne). . . . In a separate sauce pan to the beans, I heat up; tomato paste, tinned tomatoes (1 can), I can of refried beans, paprika, cumin, chilli and a dash of salt. This thickens and once it’s all heated through I dump all the other beans in and stir through. . . . I keep some spare white corn chips on hand so I can scoop up some of the mixture at the end 👌🏻 keep in mind this is a HUGE DISH. M loves it cold (weird to me) so we usually have this as dinner with only half consumed - and M finishes it off over the next day. . . . Happy Friday!! 💛 xx . . . . . . . . . . . . . .
